Counting and waste

Automatic deduction is only as honest as the last time someone actually looked at the shelf. Counting closes the gap between what the system believes and what's really there.
- Spot counts — a quick pass over your low-stock and high-value items; the highest signal for the least effort.
- Full counts — the periodic everything-count that resets the baseline.
- Waste entries — when the walk-in fails or a batch burns, record the adjustment as waste with a reason. It corrects stock *and* shows up as waste in your numbers instead of quietly inflating food cost.
Note: Variance that keeps showing up on the same ingredient is information — portioning drift, over-prepping, or shrinkage. The count data is how you find out which.
